
《 Confit salmon with petit pois à la Francais 》
One in every of my favorite components is salmon whether or not it’s smoked, sashimi or grilled. So once we noticed this recipe on gbchefs by tom_kitchin for confit of salmon we needed to give it a go. 🐟

I need to admit that the look of the salmon was exhausting to get my head spherical. It appeared uncooked within the center which given I beloved sashimi shouldn’t trouble me however I believe it was totally different being on a scorching dish 🤷🏼♀️ Both means, it was pretty and a method we’ll use once more. 🍣

For the petit pois à la Francais, soften onions in butter after which add some blanched peas ed by double cream. Simmer for a couple of minutes after which mix. Put aside and fry some pancetta in butter after which add the pea puree and the remainder of the peas and cook dinner for four minutes. Add the newborn gem lettuce and stir able to serve. 🥬

We obtained two recent salmon steaks from youngs_fish_ltd which have been wonderful high quality. The salmon is submerged in EVOO warmed to 37’C and cooked for 10 minutes being cautious to maintain the temperature at 37’C. 🔥

Slice the salmon and plate on prime of the peas and season nicely. 🍽️

We served ours with new potatoes in a garlic parsley butter cos a lady gotta have carbs. 🐷
