On the menu tonight? Hen, risotto rice and leek – as voted by you. We had so many nice wildcard strategies this week that we picked a pair, bacon and parmesan. 🧑🍳

We began by pan frying diced rooster breast and pancetta in olive oil, then setting apart for later. 🥓

In a distinct pan, fry shallots in olive oil after which add your rice and coat. Add a glug of white wine and scale back down. 🧅

Progressively add rooster inventory till the rice is cooked. We added leeks alongside the best way in addition to a sprinkle of parmesan. 🐔

We served a tarragon cream alongside the risotto made with (extra) white wine, pepper, tarragon sprigs and onion. As soon as all the things is cooked by in a pan, add double cream and scale back down. 🍾

High with pea sprout and parmesan shavings, et voila! 🧀
