Tonight we had Moroccan Rooster, a comforting hen and caramelised onion one-pot with Ras el Hanout, pomegranate molasses and harissa. 🇲🇦

First the hen is marinated within the Ras el Hanout and pomegranate molasses. Grill lemon wedges on a baking tray to imitate the character of preserved lemons. 🍋

Subsequent warmth oil in a pan and fry the onions for five minutes. Add the hen and sultanas then the Harissa Paste with 100ml of water. Deliver to the boil, then scale back and simmer on a low warmth. 🐔

Put together the couscous, as soon as it’s cooked, fluff it up with a fork and blend in mint leaves. 🍃

Serve the hen and couscous, season and thoroughly squeeze the new grilled lemon over it. Yum. 🍽️
