
《 Butternut Squash Risotto 》

METHOD
➊ To make your puree, soften a medium diced squash in loads of butter. Add 2 cloves of garlic, three sprigs of thyme and a handful of sage leaves and permit to prepare dinner for three minutes.
➋ Add 200ml of veg inventory and cut back down. Repeat as soon as extra.
➌ Take away from the warmth and take out the sprigs of thyme. Mix till you might have a clean puree. Regularly add 75ml double cream and a handful of Parmesan.
➍ Put together 500ml of veg inventory and maintain alongside your puree able to make the risotto.
➎ For the risotto, fry 2 shallots in EVOO. Add butter after which your rice and coat for 1 minute. Add a glug of white wine after which regularly add 50/50 inventory and puree. That is the important thing to the silky, wealthy flavour of the risotto – making a squash puree and mixing that 50/50 with vegetable inventory!
➏ Whereas the risotto is cooking, fry some sage leaves in EVOO till crispy and take away to paper towel. Add small cubes of squash to the oil and prepare dinner till softened. Take away to paper towel.
➐ Make Parmesan crisps by grating cheese in piles onto baking paper and cooking within the oven at 220’C for five minutes or till crispy.
➑ As soon as your risotto rice is cooked however a little bit al dente, take away from the warmth and plate up, prime with crispy sage and squash cubes and add your Parmesan crisps.
