《 Courgette, Asparagus & Goat’s Cheese Tart 》
I’m on a mission to eat extra veg in the meanwhile. After searching for suggestions for veggie recipes, associates of ours steered ‘The Inexperienced Roasting Tin’ cookbook by missminifer. They mentioned (and I quote) “you already know usually you prepare dinner like 2 or three issues from a cookbook, properly we’ve ed greater than half of the recipes in that guide”. Excessive reward should you ask me! 📗

To make this tart you’ll want:
❥ courgettes
❥ asparagus
❥ olive oil
❥ lemon zest
❥ recent dill
❥ ready-rolled puff pastry
❥ creme fraiche
❥ goat’s cheese with rind
❥ salt & pepper

Begin by preheating the oven to 180C then slice courgettes and minimize off the woody ends of the asparagus. Place in a bowl with half a tablespoon of olive oil, half a teaspoon of sea salt, 1 lemon (zest solely), freshly floor black pepper and a handful of chopped recent dill, then combine collectively. 🍋

Lay out a sheet of ready-rolled puff pastry and unfold with creme fraiche. Organize the courgettes like fish scales then add skinny slices of goats cheese. Place the asparagus spears in a neat line throughout the centre of the tart. 🥧

Switch to the oven and prepare dinner for 30-35 minutes. I served with roasted cherry tomatoes for dinner then with homegrown salad leaves and dressed cherry tomatoes with lunch leftovers. Significantly yum. 🍅
